Popis: The article shows the relevance of the spread of food poisoning and intoxication among the population, especially schoolchildren and students, and notes the importance of sources of microbial contamination of food production facilities. Food poisoning is a serious problem for the population, especially in urbanized areas, in large cities. Every year, millions of people around the world become victims of food poisoning, which leads to numerous diseases and even deaths. The method of analysing published studies, the method of observation, and the method of comparison were applied.The work proposes solutions to prevent food poisoning, among which the emphasis is placed on improving the sanitary and hygienic literacy of personnel involved in the preparation and sale of food in catering networks with the help of training programmes on compliance with sanitary and hygienic standards. The aims, objectives, outcomes and a summary of the content of training programmes for professional development and additional professional qualifications are presented.
В статье показана актуальность распространения пищевых отравлений и интоксикаций среди населения, в особенности школьников и студентов, отмечено значение источников микробного загрязнения пищевых производств. Пищевые отравления являются серьезной проблемой для населения, особенно на урбанизированных территориях, в больших городах. Каждый год миллионы людей по всему миру становятся жертвами пищевых отравлений, что приводит к большому количеству заболеваний и даже летальным исходам. Применен метод анализа опубликованных исследований, метод наблюдения, метод сравнения. В работе предложены пути решения предупреждения пищевых отравлений, среди которых акцент сделан на повышение санитарно-гигиенической грамотности персонала, занятого в приготовлении и продаже пищи в сетях общественного питания с помощью обучающих программ по соблюдению санитарно-гигиенических норм. Представлены цели, задачи, достигаемые результаты и краткое содержание обучающих программ повышения и получения дополнительной профессиональной квалификации.
