В статье рассматриваются вопросы оптимизации логистических затрат предприятий общественного питания. Логистические издержки являются серьезной проблемой для многих компаний, особенно в условиях турбулентной внешней среды и увеличения конкуренции. В этой связи многие фирмы стремятся оптимизировать свои логистические процессы, чтобы уменьшить затраты и повысить эффективность. В статье исследованы общие, плановые и фактические логистические издержки ресторана «Вкусно и точка». Проведён анализ показателей эффективности работы склада ресторана «Вкусно и точка» за апрель 2023 г. В результате проведённого анализа были определены основные проблемы, связанные с высокими издержками на транспортировку продукции, а также работой склада хранения продукции «Вкусно и точка». Для планирования работ проекта использовалась диаграмма Ганта, также был разработан бюджет проекта по снижению логистических издержек ООО «Вкусно и точка». The article deals with the issues of optimizing the logistics costs of public catering enterprises. Logistics costs are a major concern for many companies, especially in a turbulent external environment and increased competition. In this regard, many firms are looking to optimize their logistics processes in order to reduce costs and increase efficiency. The article explores the general, planned and actual logistics costs of the restaurant "Vkusno i Tochka". An analysis of the performance indicators of the warehouse of the restaurant "Vkusno i Tochka" for April 2023 was carried out. Because of the analysis, the main problems associated with the high costs of transporting products, as well as the operation of the Vkusno i Tochka product storage warehouse, were identified. To plan the work of the project, a Gantt chart was used, and a project budget was developed to reduce the logistics costs of Vkusno i Tochka LLC. |
